HEALTHY CORNER

Modern, creamery, blue cheese made from cow's milk. It is a half-moon-shaped cheese. The moist, natural rind may develop some gray, brown or white moulds.

The cheese was developed in 1960's. Blue Castello has a Brie-like texture, with the blue in fairly thick, horizontal lines. Enriched with cream.

The aroma is of mushrooms and the taste is mildly spicy.
